芥兰炒牛肉平平无奇,我们潮州人做法必定用上「沙茶酱」,做出家乡灵魂味道。我的贴士是用上等级较优质的牛肉,省去用豆粉水的步骤,务求十分钟煮出一碟有菜有肉的潮州好味道!

Satay beef and vegetables - a Chiu Chow delicacy!

Ingredients:

Beef slices, Gai lan (Chinese broccoli), satay paste, ginger, garlic, oil

Method:

Boil the gai lam vegetables in hot water adding oil and salt, then place on plate.Make a satay paste mix using satay paste, water and cornstarch and set aside.In a heated wok add oil then add minced garlic and ginger, then add the beef, give it a quick stir fry, then immediately add the satay paste mix.Pour on top of vegetables. Complete!

Tips

Buy good quality beef slices so that they are soft and tender, and has been flavour instead of low quality ones which require marinating with baking soda to tenderise the meat
